Garage Bar Announces New Executive Chef

Award-winning Hospitality Group Promotes Richard Sible

PRESS RELEASE – 21c Museum Hotels, the award-winning boutique hotel, contemporary art museum and restaurant group, is proud to announce the appointment of Richard Sible as executive chef of Garage Bar, located in downtown Louisville’s NuLu or East Market District.

Sible has been chef de cuisine at Garage Bar since joining the restaurant shortly after it opened in 2011. He succeeds Michael Paley, who is departing this fall to pursue other opportunities.  Paley and Sible will continue to collaborate in the coming months to ensure a smooth and seamless experience for guests and the team.

Sible’s dedication to mastering the custom-built wood-fired pizza oven has helped guide the menu at Garage Bar since day one.  Garage Bar consistently incorporates local farm’s produce into the menu and showcases a rotating selection of regional country hams. The Garage Bar menu will retain signature dishes like Sweet Corn Pie, Brussels Sprout Pie and Fried Turkey Wings. Sible has been an integral part of Garage Bar’s menu development since before the restaurant’s opening. As executive chef, he expects the menu to retain the same spirit that Garage Bar guests have come to know and love, with the gradual introduction of new menu items that draw inspiration from responsibly sourced ingredients.

“Having been a part of the 21c team since helping open Proof on Main, I am honored to have the opportunity to work alongside such a dedicated team and continue to grow and learn as a chef,” Sible says.  “I look forward to continuing to evolve the menu at Garage Bar and working with our incredible group of local farmers, purveyors, producers and our Garage Bar team.”

Richard was one of the first members of the kitchen team at Proof on Main in 2006. He has worked alongside Michael for a long time and we are proud to promote him to lead the kitchen at Garage Bar.”
